Chicken Shawarma is a regular fave of our whole family, so I love trying out new recipes. And this one was a HUGE hit. I'm sure it has something to do with the fact that even though it's a salad, it has sweet potato fries sprinkled all over it. But, whatever. The kids ate a ton of it, including the veggies. So I'll count that as a win!
The rest of the 30 days is a little nuts with all the dining out and holiday shenanigans, but I am sharing it nonetheless. We just started on another round of Whole30 and are on day 3. So I'm sort of losing my mind without cake and champagne, but I will have an entire 30 days of clean eating recipes for you the next go around. BTW, this Chicken Shawarma would be totally Whole30 compliant if you skipped the naan (painful, I know), honey, hummus, and cheese. Is anyone else doing a Whole30 or other food challenge in January!?
Chicken Shawarma Naan Salad with Sweet Potato Fries
(from Half Baked Harvest)
Ingredients
chicken shawarma
- 2 sweet potatoes, cut into matchsticks
- 1 lb boneless skinless chicken breasts, cut into bite size chunks
- 1 tbsp honey
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt + pepper
- juice of 1 lemon
- 2 cloves garlic, minced or grated
- pinch of crushed red pepper flakes
- 1/4 cup olive oil
salad
- 2 tbsp olive oil
- salt + pepper
- 4 fresh naan
- 8 ounces hummus
- 1-2 heads romain lettuce, chopped
- 1 cup cherry tomatoes, halved
- 2 persian cucumbers, sliced
- 1 avocado, sliced
- 8 ounces feta cheese, crumbled
- fresh micro greens, parsley and mint for serving
chipotle tahini
- 2 tbsp tahini
- 2 tbsp olive oil
- juice of 1 lemon
- 1 chipotle chili in adobo, finely chopped
Directions
In a large gallon zip-top bag, combine the ingredients for the chicken and toss to combine. Seal and chill at least 1 hour or up to 12 hours.
Preheat oven to 425 degrees F.
Place the sweet potatoes on a large baking sheet and drizzle with olive oil, salt, and pepper. Gently toss with your hands to evenly coat. Bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes tender, but crisp.
Thread chicken pieces on skewers. Discard marinade. Grill chicken over medium-high heat until lightly charred and cooked through, turning skewers occasionally throughout cooking, about 10-12 minutes total. Transfer skewers to plate.
To assemble the salads, spread each piece of nann with hummus. Top with lettuce. Combine tomatoes, cucumbers, sliced avocado, feta cheese and chicken skewers. Garnish all the parsley and mint and a drizzle of chipotle tahini.
For tahini, combine all the ingredients in a bowl and whisk to combine. Add water to thin if needed. Season with salt.
